Cub Scouts Prepared a Healthy Meal for the Seniors

A nutritious and scrumptious feast was prepared by the 10- 12-year-old Webelos Cub Scouts Troop at Spring Hills Singing Woods Assisted Living to celebrate National Nutrition Month on March 12, 2016. The Webelos, a younger group of future Boy Scouts of America and part of the Great White Sharks Troop, prepared a healthy three-course meal including fruit pizza, spinach apple salad and vegetable pinwheels. The residents had the opportunity to sample all of the dishes. Spring Hills Singing Woods gave the kids each a Chef Hat to wear with their uniforms!

Recipes:
Fruit Pizza
Ingredients:

  • 1 1roll (16.5 oz) Pillsbury™ refrigerated sugar cookies
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup sugar
  • 1/2 teaspoon Vanilla
  • 2 kiwifruit, peeled, halved lengthwise and sliced
  • 1 cup halved or quartered fresh strawberries
  • 1cup fresh or frozen blueberries
  • 1/2 cup apple jelly

Directions:

  1. Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray. In pan, break up cookie dough; press dough evenly in bottom of pan to form crust. Bake 16 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
  2. In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese. Stir jelly until smooth; spoon or brush over fruit. Refrigerate until chilled, at least 1 hour. To serve, cut into wedges or squares. Cover and refrigerate any remaining pizza.

Spinach Apple Salad
Ingredients:

  • 10 oz baby spinach
  • 3 small gala apples or 2 medium, cored and thinly sliced
  • 1 cup pecans, toasted
  • 4 oz feta cheese, crumbled (don’t use the pre-crumbled stuff)
  • 1/2 cup dried cranberries
  • 12 oz bacon, cooked and crumbled (optional)

Directions:

  1. Mix everything together

Veggie Pin wheels
Ingredients:

  • Tortilla Shells
  • 1 package (8 oz) cream cheese, softened
  • 16 oz Sour Cream
  • 3 cups Sharp Cheddar Cheese
  • ½ cup green onions
  • 1 cup of green & red peppers
  • 1 cup broccoli
  • 1 cup cauliflower

Directions:

  1. Mix cream cheese, sour cream and cheese together
  2. Spread over Tortilla Shell
  3. Put chopped veggies on top of shell
  4. Roll the tortilla shell up and slice
